Ingredients:
- Chicken thighs (preferably deboned and skinless)
- 2 Tablespoons of lemon juice
- Extra virgin olive oil
- 3-4 cloves of garlic
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/2 teaspoon cinnamon
- 1/2 teaspoon turmeric
Instructions:
- Prepare the Marinade: Add your spices together in a bowl, and mix them with a fork or whisk. Extract 2 tablespoons of lemon juice. Finally, mince your garlic.
- Add ingredients to a bag or bowl: Add your chicken, spices, olive oil, garlic and lemon juice to a bowl or bag. Allow the chickens to marinate for at least 1 hour in the fridge. Optionally leave the chicken overnight for stronger flavours. If you are using bone-in or skin-on chicken, make sure to remove these before marinating and cooking.
- Cook chicken: Put your chicken on a baking sheet and cook at 400 degree Fahrenheit for about 15 minutes. Make sure the chicken is at least 165 degree Fahrenheit. If it goes a little bit over, that’s ok. Chicken thighs have lots of fat, so they will not dry out if they are slightly overcooked.
- Prepare wrap extras: Prepare your wrap extras for the wrap. You can slice and chop of any number of ingredients. Lettuce, tomatoes, red onions, pickles, and so on. Add whatever you desire, including a savoury sauce, such as garlic sauce or hummus. Finally, pick a wrapping bread that suits you. You can use pita bread,, flour tortillas, or any other bread that you prefer!
- Build your wrap: Once your chicken is cooked, let is rest for a few minutes before slicing. Once ready, slice your chicken, and add it to your wrap. Along with this, add your sauce and toppings. When wrapping your shawarma, using parchment paper to keep ingredients from spilling out of the wrap.
